What You'll Need

Ingredients

 4 chicken breasts (boneless & skinless).

• 2 garlic cloves (crushed).

• ½ red onion (chopped).

• 1 cup chicken broth.

• ½ cup thick cream.

• 2 tbsp coriander (finely chopped).

• 2 tbsp lime juice (fresh).

• 1 tbsp olive oil.

• ½ tsp chilli flakes.

Step by Step

Instructions

  1. • Heat oil in a large frying pan and cook chicken 8-10 minutes until cooked
  2. through. Remove chicken from the pan and cover to keep warm.
  3. • In the same frying pan, cook the onions and garlic for 1 minute.
  4. • Pour in chicken broth, lime juice, chilli flakes and coriander. Gently bring
  5. to the boil for 8-10 minutes.
  6. • During the last 2 minutes, whisk in the cream. Turn off heat and return
  7. chicken to the pan for 2-3 minutes.
